Hows a head not chopped off ?

So anyway while i was making a cheese and onion sandwich tonight my brain was wandering as it does, and i thought to myself, "How does that trick with a guillotine not chopping off a head work ?"...am i the only bloke in my kitchen that doesnt know how this trick works ?...well i am BUT ! does anybody else knows how it works.. any idiot does it on tv nower days so its obviously pretty simple.
